Kombucha is another probiotic drink that is a little similar to kefir. Most of the kombucha you will find at the store is brewed using black tea or green tea. Since I don’t drink those teas, I decided to brew my kombucha using other herbal teas. I was lucky enough to have been given a SCOBY from a friend, so I’m unsure as to the process of growing your own SCOBY. Maybe one day I’ll venture to do so. But since I have two (mine had a baby!) already, the urge to make my own is pretty weak.  So here’s how I make it:

1. Boil a quart of filtered water.

2. Add 4 tea bags and let steep for 20 minutes. My favorite teas so far are organic hibiscus and organic ginger.

3. Stir in 3/4 cup of sugar and let cool.

4. Pour tea into a half-gallon or gallon sized glass jar and then fill the jar with another quart of cool filtered water.

5. Add the SCOBY and 1/2 cup of kombucha from the last batch as a starter. (Always keep your SCOBY in at least 1/2 cup of kombucha when storing it.)

6. Cover jar with a paper towel and secure it with a rubber band.

7. Cover the entire jar with a towel or cloth to keep dark or keep in a dark place for 7-10 days. The longer it sits, the less sweet it will be. Don’t let it sit longer than 10 days. That is when the alcohol content rises to where you don’t want to drink it.

8. After the 7-10 days, remove the SCOBY from the jar and place it in a smaller jar with 1/2 cup of the kombucha to start the next batch.

9. Pour the kombucha into gasket-lidded bottles and close the bottles.

10. Let the bottles sit at room temperature for 1-5 days. This adds carbonation and makes the flavor stronger.

11. Move the bottles to the fridge to slow down the fermentation process and enjoy!

Here are some informative websites that can help you assess the status of your SCOBY. Sometimes they start to look wierd and it’s nice to have some resources to be able to tell if it’s normal or not. Just a hint: mold is not good. Throw away entire batch of kombucha and the SCOBY if you see mold.
