This is a great way to use all kinds of vegetables. It caramelizes the sugars in the vegetables to make them just melt-in-your-mouth delicious. My kids can’t get enough of them!

Use a variation of the following vegetables based on what you have

Fennel bulb, sliced

Carrots, cut into 2″ pieces

White mushrooms, quartered

Small beets (red, gold, chioggia), quartered

Potatoes, cut into bite-sized wedges

Preheat oven to 400 degrees. Line a baking sheet with aluminum foil or parchment paper. Add vegetables. Drizzle olive oil liberally over all the vegetables. Sprinkle liberally with garlic salt and fresh ground pepper. Bake in oven for 25 min. Set oven to broil and cook for another 3-5 minutes or until the vegetables start to brown. Remove from oven and serve.
