1 head romaine lettuce

5-6 campari tomatoes or garden tomatoes diced, or 2 cups of grape tomatoes halved

1-2 avocadoes, diced

1/8-1/4 cup purple onions, diced (optional)

handful of sunflower seeds (optional)

1 cup cooked quinoa or brown rice (optional)

balsamic vinegar

Himalayan pink salt

Shred the romaine and add to a large salad bowl. Add tomatoes and avocadoes and any of the other ingredients you wish to add. Drizzle with about a tablespoon of olive oil and toss gently to slightly coat lettuce leaves. Add a few splashes of vinegar (maybe a tablespoon?) to taste. Add salt and to taste and a few grinds of the pepper. Toss again to fully mix in the vinegar, salt and pepper. Taste test a leave of lettuce to check flavorings. Add more salt or vinegar as desired. Serve.
