Basic Green Salad

Who doesn’t love a big green salad? Especially one that has a dressing that tastes good and isn’t full of added fats and sugars. I’ve got one here for you that is so easy, you’ll never go back to store-bought dressing again!

Ingredients:

For salad:

  • 1 head of Romaine lettuce, chopped
  • 1/3 cumber, sliced
  • 1 carrot, shredded
  • 1/4 cup of purple or green onions, sliced
  • 2 cups of halved cherry or grape tomatoes
  • 3-4 radishes, sliced
  • 1 avocado, diced
  • any other vegetable you would love to add!
  • sunflower seeds or other seeds of choice (optional)
  • sliced almonds or other nuts of choice (optional)

For dressing:

  • 1/8-1/4 cup of good flavored extra virgin olive oil (I buy organic Paesano Sicilian EVOO)
  • 1/8-1/4 cup of aged balsamic vinegar (you want it aged so it has a stronger flavor)
  • Himalayan pink salt or sea salt to taste
  • freshly ground pepper to taste

Directions:

Gently toss all the vegetables together. Drizzle the olive oil over the salad, just enough to barely coat the lettuce. I would guess close to 1/8-1/4 cup. Then toss the salad to make sure the lettuce is coated. This helps the vinegar to evenly coat the lettuce. Drizzle the vinegar over the salad. Toss the salad to evenly coat the lettuce with the vinegar. Sprinkle with salt and pepper and toss again. Taste a leaf of lettuce and add more salt and pepper as desired. Enjoy!

I apologize for not having measured amounts for the dressing. A lot of it is personal preference for taste. I like a more vinegary taste than my husband, and he prefers a little more salt.
